So quick and easy and so delicious ๐Ÿ˜‹ Ingredients: โ€ข 1 bunch chopped kale (I mixed kale and romaine) โ€ข ยผ cup fresh lemon juice โ€ข ยผ cup olive oil โ€ข 2 garlic cloves crushed โ€ข Salt and pepper to taste โ€ข red chili pepper flakes to taste โ€ข ยผ โ€“ ยฝ cup grated Parmesan cheese โ€ข ยผ cup toasted bread crumbs (optional) โ€ข Grilled chicken, salmon, shrimp or protein of choice Instructions: โ€ข Whisk together lemon juice, lemon zest, olive oil, garlic, chili flakes, salt and pepper in small bowl โ€ข Add kale, romaine, spinach, whatever youโ€™re using to a large bowl โ€ข Pour dressing over kale and add half of the cheese โ€ข Toss to coat evenly โ€ข Top with remaining cheese and breadcrumbs โ€ข Add protein of choice and enjoy ๐Ÿ˜Š
